Chana Masala is a dry spice mix to make Indian vegetarian stew, known as ‘Chole / Chana masala’ or spicy chickpea salad (fairly dry dish).
Chana masala spice mix is added to boiled chickpeas and simmered with onions and tomatoes. It gives chickpea dish a unique aroma with traditional taste and flavor, and served with Nan or Bhature, Chapati or Basmati rice, plain yogurt.
Use 4tsp ‘Chana Masala’ For 2 cups boiled chickpeas
Ingredients:
Coriander, Cumin, Black Pepper, Amchoor (Dry Mango) Powder, Red Chili Pepper, Turmeric, Cinnamon, Cardamom, Nutmeg, Mace, Cloves.
Sample recipe to make Chana Masala:
Heat 1tbsp oil in a large skillet, stir fry 2 pc bay leaves for 2 min, add 1 chopped onion, 1tsp garlic paste, 1tsp ginger paste and 1 pc green chopped green chili (opt) and sauté over medium heat until brown (5 minutes). Turn heat down to medium-low and add 4tsp ‘Chana Masala’, cook for a min, add the 2 chopped tomatoes, 2 cups boiled chickpeas, 2/3 cup water. Stir and simmer uncovered for 5-10 minutes, then add salt to taste and 1tsp fresh lemon juice, serve hot.
